Sushi is the representative food of Japan, and one of the most popular dishes among Japanese people for a special occasion. It consists of vinegared rice and various toppings such as fresh fish, prawns, and seaweed.
Generally, nigiri-zushi refers to standard sushi formed with hand-pressed rice. Other than nigiri-zushi, there are many kinds of sushi such as roll sushi, Chirashi zushi (scattered sushi), Hand-formed Sushi, etc. In our Sushi course, students will learn the basics of nigiri-zushi. While learning all the knowledge needed to open a sushi restaurant, the students will take intensive training both at the school kitchen and the sushi restaurants.
4-week Sushi Course was held in November 2019!
This course was specially organized for the student who wished to open a Japanese restaurant serving sushi, sashimi, and seafood rice bowls where the customers can enjoy the authentic Japanese tastes in China. Therefore, a concentrated hands-on training program was provided under the guidance of the instructors who are professional sushi chefs.
4-Week Sushi Course included:
-Lecture on sushi history and interior design/business planning for a sushi restaurant
-How to sharpen a knife
-How to cut different types of fish
-How to prepare vinegared rice and shape the sushi rice with a hand
-How to make nigiri-zushi and an assorted seafood rice bowl
-How to make roll sushi and decorative sushi
-How to make side dishes such as tofu dishes (appetizers), sashimi, grilled fish, tempura, etc.
-Visits to a sake brewery, a rice factory, Toyosu fish market, and kitchen tools street in Tokyo
-Making your tableware (ceramics experience)
At the end of the course, after many hours of training in the kitchen, he got the course certificate!
